Chef Jim's Award Winning Cajun Lightning
​Chicken Barbeque

(from one of our cooking demos)

Ingredients:​
  • 1 lb. Boneless/skinless chicken thighs (1" cubes)
  • 1-2 tsp. NHHS Cajun Seasoning (more for spicier)
  • 1/4 cup Frank's Hot Sauce
  • 2 tbsp. MOV Cayenne Chili Olive Oil​
  • 1 cup Cattlemen's BBQ Sauce​
  • 1/2 cup Cream Sherry Wine
  • ​1/3 cup each diced green peppers, yellow onions & celery
  • 2 tbsp. unsalted butter
  • 2 tbsp whole wheat flour
  • 1 cup chicken stock
  • 1/8 cup Pure Maple Syrup

​Directions:
The day before, combine first 4 ingredients. Cover with plastic film and refrigerate overnight.  

In a large pan, melt butter and oil over medium heat, add veggies. Cook 2-3 minutes. Add flour and whisk for 2-3 more minutes until golden brown.  

Add chicken stock and wine slowly and cook for 1 minute. Add barbecue sauce and simmer for 10 minutes, stirring often.

Cook marinated chicken thoroughly in the oven or a pan until minimum internal temperature reaches 165 degrees F.

​Add chicken to sauce and simmer over a low heat for 20 minutes.
