Caribbean Shrimp w/Mango Salsa & Tostones

Mango Salsa
  • 1 Mango, diced
  • 1/4 cup finely diced red pepper
  • 1/4 cup finely diced red onion
  • 1/4 cup finely diced grape tomatoes
  • 2 Tbls. Chopped cilantro
  • Juice of 1/2 lime
  • Salt

  • 2 Lbs. Shrimp
  • 4 Tbls. Butter
  • 1 Tbls. NHHS Thai Ginger Citrus Blend
  • 1 Tbls. NHHS Jamaican Jerk Seasoning
  • Salt
 
Tostones
  • 2 Green Plantains
  • MOV Extra Virgin Olive Oil
  • Salt
Directions:
Mix together the salsa ingredients in a bowl. Let it rest.
 
Mix the Thai Ginger Citrus & Jerk seasonings together and coat the shrimp. Heat the butter in a saucepan & saute the shrimp until it turns pink. Remove from the heat & salt to taste.
 
Tostones:
Cut the plantains into 1” slices. Saute in the oil until they are browned on each side.

Place them on a cutting board & cover with waxed paper.  Flatten them with a glass jar or can.

Salt & saute again.
 
Serve the shrimp with the salsa on top and the plantains to the side.
