Corn, Grape Tomatoes & Spicy Coffee Rub  ​Mash-Up​

​This recipe is from a cooking demo done for us by Chef Tina from Rub Me Tender Spice Rubs.  As if we needed another reason why we can't wait for corn and grape tomato season every year!!

Ingredients:
  • 7 ears of corn on the cob (white or yellow)
  • 6 ounces grape tomatoes (cut in half)
  • 3 Tablespoons MOV Extra Virgin Olive Oil or intused MOV Olive Oil of your choice (Garlic, Butter, Cayenne)
  • 2 Tablespoons Rub Me Tender Spicy Coffee Rub
Directions:
Remove the husks and silk from the corn.  Cut the kernels as close to the husk cob as possible.  You should have about 6 cups of kernels.  In a large saute pan over medium heat, add the olive oil.  Add the tomatoes, tossing for about 2 minutes.  Add spicy coffee rub and stir for about 30 seconds.  Add the corn and saute on medium low heat for 5-6 minutes stirring occasionally.  Transfer to a large bowl and serve.
