Oven Baked BBQ Beef Ribs
From the MOV Kitchens: Courtesy of Rebecca Schwarz

Ingredients:
Works with as little as 2lbs of beef ribs/brisket, but if you’re going to the trouble might as well go all out.
  • 2 tbsp NHHS Garlic Powder
  • 2 tbsp NHHS Onion Powder
  • 2 tbsp NHHS NH Farmhouse Blend
  • 1/2 cup packed dark brown sugar
  • 4 tsp NHHS Oregano leaves
  • 2 tsp NHHS Chili Powder
  • 2 tsp NHHS Hickory Smoked Salt
  • 2 tsp NHHS Paprika
  • 2 tsp espresso powder

Directions:

Trim heavy fat and silver skin off the tops of the ribs (do not remove the membrane from the bottom of the ribs as this will cause the meat to slide off) Coat tops and bottoms with a heavy dusting of Becci’s Beef Rub and massage into meat. Allow to marinate covered in the fridge for a minimum of two hours and up to overnight.

Preheat oven to 250°. Place ribs in a single layer in a deep roasting pan (it’s ok if they touch) and cover tightly with aluminum foil. Bake on the middle rack 3 1/2 to 4 hours for a small batch. Larger batches may take longer.

When the ribs are done to your liking carefully pour off the excess liquid and if desired brush with your favorite bbq sauce.

Broil on low to caramelize the bbq sauce. This step can also be done over low heat on the grill. It will not take long so take care not to burn it.

The Hickory Smoked Salt in Becci’s Beef Rub adds a nice smoky flavor without slaving over a smoker all day, however this recipe would work great in a smoker too.

Enjoy!
