The most common of the cinnamons used in the United States. This cinnamon, also known as Indonesian Cinnamon, is the ground bark of the evergreen tree Cinnamomum cassia, in the Laurel Family. It has a sweet, warm earthy flavor and aroma and is one of the most abundantly used of the spices. Cinnamon goes particularly well in sweet confections but also lends itself to curries and other savory dishes.
