Chimichurri Chicken

Ingredients:
- 4 Chicken thighs
- 4 Tbs MOV Chimichurri Verde Olive Oil
- 5 Garlic cloves
- 2 Shallots
- 2 tsp NHHS Dried Rosemary
- 2 tsp NHHS Dried Oregano
- 1 tsp NHHS Mild Contoocook Chili Blend
- 1 tsp salt
- 1/2 cup Fresh basil
- 4 Sprigs Fresh rosemary
- 1 Can of Tomatoes (no juice)
- 2 Bell peppers (1 red, 1 yellow)
- 1/2 - 1 cup heavy cream
- Fresh cracked pepper to taste
- Green onions/ chives (optional garnish)
Directions:
Dice the bell peppers and set aside, mince the shallots and garlic.
In a saucepan,, add the Chimichurri Verde Oil and heat the oil on medium-low heat.
Add the shallots and garlic to the heated and oiled pan, and cook until just fragrant. (about 30 seconds)
Add the chicken thighs, and season with dried rosemary, dried oregano, and Chili Blend. Brown each side of the chicken thighs.
Once browned, add the tomatoes, bell peppers, salt, cracked pepper, and fresh rosemary to the pan.
Cook for about 5 minutes, until mixture is starting to simmer, and pour in 1/2 cup of Heavy cream.
Simmer on low- medium heat for about 20-30 minutes, or until the chicken is cooked through to a temperature of 165 F. Adding the basil in the last 5-10 minutes,
For a falling off the bone chicken, continue to simmer the chicken, and add additional heavy cream if needed.
