“Tajin” Corn Salad

Ingredients:
- 1 Cob sweet corn
- 1/4 Red onion
- 1/2 Tbs MOV Butter Olive Oil
- 1/4-1/2 tsp NHHS Mild Contoocook Chili Blend
- 1/2-1 tsp NHHS Traditional Corn Topper
- 2 tsp Lime juice
- 1/2 tsp Lime zest
- 1/2 Jalapeno
- 1 tsp Fresh cilantro (garnish, if desired)
Directions:
Brush corn cob with Butter oil and grill on high heat until each side is slightly charred. About 2-3 minutes per side
Remove the seeds from the Jalapeno and very thinly slice the pepper.
Cut the kernels off the corn cob, and dice the onion to about the same size, before adding to a bowl.
Add remaining ingredients EXCEPT for cilantro, and toss together until combined.
Garnish with fresh cilantro if desired
