Medieval Shrimp Salad

Ingredients:
- 1 bag frozen salad shrimp, thawed
- Flour
- 1/2 bag coleslaw cabbage mix (without dressing)
- 1 medium carrot
- 1 tsp salt divided
- 1-2 tsp pepper divided
- 1 Tbs flour
- 1/2 Tbs MOV Greek Thyme Olive Oil
- 1-2 Tbs MOV Extra Virgin Olive Oil (Intense Robust suggested)
- 1/2 Tbs MOV Traditional Balsamic
Directions:
Toss the salad shrimp in the flour and about half the salt and pepper
Saute Shrimp in the Thyme oil until golden and crispy. 2-5 minutes.
Peel and cut 1 carrot into 1/8 inch cubes and add both carrots and coleslaw mix to a bowl..
Add crispy shrimp to the vegetables and toss with EVOO, salt, and pepper
Finish with a drizzle of Traditional Balsamic.
Serves 4
