Directions:
Preheat oven to 325F. Parboil carrots and potatoes. Evenly place carrots, potatoes and onions on the bottom of a large deep pan and drizzle oil, salt & pepper on top. In a small bowl mix 1-2 Tbs oil, thyme, rosemary, oregano and 1 tsp salt and pepper. Pat lamb dry w/paper towel, slice small holes and insert garlic cloves. Rub herb mix on lamb and lay on top of veggies. Roast for ½ hour at 325 then increase temperature to 375. Cook for about another 1/2hour or until internal temperature reaches 145F. Let rest for 10-15 minutes then slice and serve. Enjoy! |
