Apricot & Fig Turkey Breast

Ingredients: 
  • 1 Bone-in Turkey Breast (2-3 Pounds)
  • 1/4 Cup Apricot Jam
  • 1/4 Cup MOV Mission Fig Dark Balsamic
  • 1/4 Water
  • ​2 Tbsps MOV Extra Virgin Olive Oil
  • 1 Tbsp Finely Chopped Fresh Oregano
  • 1 Small Leek, chopped
  • 8-10 Fresh Mission Figs
​Directions:
Place Turkey in a baking dish.
In a small bowl, whisk together apricot jam, Fig balsamic, water, Extra Virgin Olive Oil, and oregano.
Pour over turkey breast. Surround turkey in the bottom of the pan with the leeks and figs. 
Cover pan and refrigerate for 1-4 hours or overnight.
Preheat oven to 325F. Place pan with marinated turkey in the oven and roast for approximately 2-3 hours or until juices run clear. Meat thermometer inserted into the thickest part of the meat should read 170F. 
Remove from oven. 
Serve sliced with a drizzle of the leeks, figs and juices.
Yield: 4-5 Servings
