Directions:
Brush salmon with Extra Virgin Olive Oil, add salt & pepper and bake until it is cooked through.
Zesty Aioli: Meanwhile in a bowl - mix mayo, small-diced pickles, mustard, capers, Wild Dill Olive Oil, a splash of Champagne Vinegar, salt & pepper to create your zesty aioli.
Once salmon is cooked, assemble the sandwiches by adding the zesty aioli to the bun, arugula or watercress, and salmon. (optional: add onion or sliced cucumbers),
