Butternut Squash Salad

Ingredients: 
  • 1 Butternut squash, dice
  • 1 Box field green
  • 1/2 lb. Feta cheese
  • 1 handful roasted Stony Brook Pepitas (Pumpkin seeds)
  • 2 tomatoes
  • 11 sm. red onion, chopped
  • 1 handful dried cranberries​
  • ​Dressing: ​
  • 1/2 cup MOV A-Premium White Balsamic
  • 3/4 cup MOV Butternut Squash Seed Oil
​Directions
​
​Roast the Butternut squash coat with Butternut oil, salt & pepper.
Mix together with the cheese, pepitas, tomatoes and onion.
Pour the dressing over the salad.

The cream flavor of the butternut oil and squash paired with the salty Fetta and the crunchy pepitas make a wonderful salad experience.
