Cut chicken breast into cubes and season with salt & pepper.
In a large pot heat Tuscan Herb Olive Oil, add chicken and chopped garlic cloves - cook until no pink is showing.
In a separate pot boil some penne pasta (add a pinch of salt to water and a splash of Garlic Olive Oil so that pasta does not stick). Once chicken is cooked add cherry tomatoes, chopped spinach, yellow peppers, yellow squash and cook for about 2 minutes.
Add a cup of Parmesan cheese and pasta. Stir until cheese is melted and evenly distributed.
*optional - drizzle a little Sicilian Lemon White Balsamic before serving.
Try other vegetable combinations; mushrooms, sweet potatoes or asparagus.
