Jonathan Sawyer has been sugaring for over 23 years on his family owned far with his wife and seven children. He does all his maple sugar from the trees tapped on his farm. He is one of the last to still boil with wood using a still evaporator. He finds that when you boil with fire instead of wood, you don't get a 100% steady burn, but many people think it adds for flavor to the syrup. He boils a 1/2 gallon pot at a time and it takes 1 gallon of syrup to make 8 pounds of maple sugar.
