The dried leaves of the Anethum graveolens herb, sole species of the genus Anethum. It has a fresh, herbal, slightly lemony and floral flavor. It is present in cuisines from Germany, Poland, Finland, Norway, Sweden, the Baltic, Russia, and central Asia. It is an essential ingredient in borscht and is often used to season fish.
