The dried leaves of the flowering herb Satureja hortensis, a member of the mint family. It has a mildly sweet, pungent, slightly peppery flavor that is similar to marjoram and thyme. It is an essential ingredient in Herbes de Provence. It is a traditional popular herb in Atlantic Canada, where it is used in the same way sage is elsewhere. It works well with omelettes, chowders, poultry and fish.
