Tuscan Herb Sweet Potato Fries

Preheat the oven to 425°F.
Peel sweet potatoes and cut lengthwise into 1/2" fry-size lengths or in 1/2 - 1 inch cubes.
In a small bowl combine the olive oil, Monadnock Tuscan Herb Blend and Rosemary, toss in the sweet potatoes to evenly coat.
Place the sweet potatoes on a sheet pan. Arrange in an even layer and roast 20-22 minutes, or until lightly browned and tender when pierced with a fork.
Remove from the oven.
Drizzle with a touch of the mushroom & sage olive oil and sprinkle with roasted garlic salt to taste.
