Amazing Stuffed Butternut Squash

Ingredients: 
  • 1 Large Butternut Squash, halved and seeded
  • 2 T. MOV Garlic Olive Oil
  • 1 lb. ground sausage
  • 1/4 cup diced celery
  • 1/4 cup shredded carrots
  • 1/4 cup diced apple
  • 1/2 lb fresh spinach
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/2 cup bleu cheese crumbles
  • MOV Maple Balsamic Vinegar

Directions:
Preheat oven to 400 degrees.

Rub garlic oil all over the squash, sprinkle with salt and pepper, put cut side down, cover with foil, 
Bake for 35-40 minutes on a parchment lined pan.
Remove from oven & let it cool.

Brown sausage in a skillet and remove from pan. 
Add celery, carrots, apple, spinach and cranberries until soft.

After squash has cooled - scoop out most of it out of shell, leaving about a 1/4 inch around the perimeter.

In a large bowl, add squash, sausage, fruit, vegetables, walnuts and bleu cheese and mix well.

Spread mixture into the squash shells and bake another 15 minutes.

Remove from oven and drizzle with Maple balsamic vinegar.

Serves 2.
