Directions:
Cook your Calrose rice, then in a bowl mix Pinot Noir Wine Vinegar with sugar (or substitute with a couple of drops of Denissimo), and salt. Blend the mixture into the rice.
Heat nori in the oven for about a minute, until warm. Center one sheet of nori on a bamboo sushi mat. (Wet your hands) Using your hands spread a thin layer of rice on the sheet of nori, and press into a thin layer.
Arrange your thin sliced cucumber, avocado, and salmon (or choice of fish) in a line down the center of the rice. Lift the end of the mat and gently roll it over, pressing gently. Roll all the way to make a complete roll.
Cut each roll into smaller slices using a wet, sharp knife.
